A friend reached out to me on Instagram and asked if I had any nut free recipes. Her husband has a tree nut allergy and it posses a cooking challenge for her. I honestly don’t have many recipes that are nut free. I can’t imagine not being able to eat raw cashew chocolate cookie dough bites or almond flour cupcakes.
I needed to help my friend make something delicious and nut free that both her and her husband could enjoy together!
Nut Allergies: Tree Nuts and Peanuts, and Coconuts, Oh My!
I was overwhelmed with the amount of information for those living with nut allergies. Some people with tree nut allergies can have peanuts and coconuts. Why? Almonds and Cashews are tree nuts, peanuts are legumes and coconuts are classified as fruit. But as soon as I thought peanut butter would be okay, I learned that allergists recommend people with tree nut allergies to avoid peanuts because of possible cross-contamination in food processing facilities. According to the American College of Allergy, Asthma and Immunology, 25-40% of people that have peanut allergies have an allergy to at least one tree nut. What the heck, right? Luckily, I have a cookie recipe that is peanut free and tree nut free.
Personally, I understand the struggle that comes with diet restrictions. I have been gluten free for about 8 years now. Back then, I thought I was doomed to breadless burgers for the rest of my life. Spend a few hours on Google and you can find easy and delicious recipes for just about any diet with restrictions.
I’m not an allergist or nut-free expert. But, I do have an allergy friendly chocolate chip recipe that even non nut-free dieters can enjoy.
These cookies have a shortbread style texture that provides the perfect melt-in-your-mouth soft cookie crunch.
Nut Free Chocolate Chip Cookie Baking Ingredients
I used an allergy-free flour blend from Namaste. Flour ingredients include: Sweet brown rice flour, tapioca flour, arrowroot flour, sorghum flour and xanthan gum.
This flour blend is free from the Top 8 Allergens:
- Tree Nuts
I also used chocolate chips from Enjoy Life. Enjoy life chocolate chips are dairy, nut and soy free.
